My business does a lot of trading with China. (It's because America doesn't make much anything any more) We have a lot of friends there, so I asked one if he could tell me their favorite recipe for carp.

He obliged.

1 carp filleted and cut into pieces.
Fresh Ginger root, Sliced in 1/8" thick pieces, about ten
Appropriate amount of salt
1 Green onion diced
A piece of white jade tofu (Just tofu)
Some fresh Coriander  (if you like it)

2.Cut ginger into slices, 3-5mm thick, 6-8 slices.Cut tofu into small pieces for use.

3.Heat the wok, add olive oil,add ginger slices(Olive oil must cover the ginger slices)
Stir fry the ginger twice. When the ginger turns yellow, put the whole fish or fish in it.
4.Stir fry the two sides of the fish a little. When you see that some of the fish turn yellow, add water.(You don't need to fry the whole fish to yellow, just a little bit of the meat to turn yellow)
5.Cover the fish with water, and/or just some beer.
6.Maximum heat, cover and stew for 10 minutes
7.Put in the cut tofu and simmer for another 10 minutes (Less firepower)

8.Add some salt and a few drops of vinegar.

You can choose not to put tofu in
A successful fish soup is similar in color to milk, and it is very delicious.
